The granite on Mount Desert Island is igneous, formed when magma intruded into the area and cooled. The granites are around 420 million years old. Erosion eventually wore away the rocks covering the granite bodies, bringing them to the surface. 
The Maine Granite Industry Historical Society Museum in Mount Desert, Maine has exhibits on the history of Maine granite quarrying, including quarries on Mount Desert Island. 

Lots of pink granite can be found all over making the benches of Cadillac Mountain.
